RED ONION SALAD DRESSING
1/2 red onion cut in quarters
2/3 c. cider vinegar
3/4 c. sugar or Splenda
2 tsp. dry mustard
2 tsp. salt
1 c. canola oil
1 T. poppy seeds (optional)
In blender or food processor, blend onion and vinegar until smooth, about 1
minute. Add next 3 ingredients. While blending, slowly pour in salad
oil. Refrigerate and enjoy over your favorite salads. I usually
serve it over salad greens and top with toppings like mandarin oranges, sliced
strawberries, sliced green or red onion, slivered almonds, green apples,
Craisins, etc. Also good served with grilled chicken.
